Thursday, August 16: Mixed-Milk Cheeses from Near and Far

Cow’s milk is buttery. Goat’s milk is tangy. Sheep’s milk is thick and rich. Working with more than one type of milk allows a cheesemaker to get creative and develop signature recipes that resemble no one else’s. Like some wines, the best mixed-milk cheeses achieve complexity through blending. Tonight, we’ll taste some stellar examples of two-milk and three-milk blends from the U.S. and beyond and see if we can detect the contribution of each milk type.

A brief discussion of flour, yeasts and the science involved in “the rise” and we will be on our way to making some great tasting organic loaves. On the Friday evening we will be hands on in the dough, making dough for an overnight “retard” to increase the flavor and dough development. Saturday morning, we will learn the art of shaping, scoring and baking. By the end of the class you will be making Caramelized Onion and Jack Cheese Boule, Rustic Ciabatta, Olive Oil Focaccia, Chef B’s Famous Restaurant Rolls and a simple No Knead Bread all with confidence. A light supper will be served Friday night–Please bring a large paper or cloth bag to transport your loaves and note the early start time on Saturday morning: 8:00am-11:00am! Pre-registration is required.

28th Annual Wine Seminar – “Napa Valley, Alta California and the Wine Legacy of New Spain” @ Inglenook
Aug 25 @ 10:00 am – 2:00 pm

Please join moderator Gilles de Chambure MS for an exhilarating gallop from the Gulf of Mexico north as we taste the wines from vines brought by Spanish conquistadores, planted by Franciscan missionaries, and nurtured from Baja to Alta California, where they are tended today in the valleys of Guadalupe and Napa. We are indebted to General Mariano Vallejo for his insistence that good wine be always on one’s table.

You will taste wines in a variety of styles from historic to modern, from Baja to Napa, including those by our Hispanic vintners native to Napa, with forebears from Mexico. The seminar is followed by a lunch prepared by Inglenook’s Winery Chef, Alex Lovick and accompanied by wines from Inglenook, a founding winery of NVWLA.
