In “Composing the Cheese Plate,” a new book featuring 70 recipes for fun, creative accompaniments for cheese, co-authors Brian Keyser and Leigh Friend will challenge you to think differently about the usual cheese and wine pairing.

In this open and educational session, Brian and Leigh will discuss tools and tips for pairing cheese, the challenges of pairing Napa Valley’s favorite varietal, Cabernet Sauvignon, and how some of the accompaniments from their book, like tomato chutney and red wine shallots, can be a bridge between the cheese and wine.

You will enjoy four cheeses, with thoughtful accompaniments, along with two California Cabernets, a white wine and a sparkling wine. While some may try to convince you that Cabernet doesn’t work with cheese, you will always hear them say there are “no rules!”
