Aromas of cassis, ripe blackberry and vanilla are framed by cedar and cocoa notes. On the palate the wine is rich and dense with a finish that is long and complex. This wine will age well for a decade and beyond; we recommend decanting the wine in its youth.

Profile is Merryvale's flagship Bordeaux blend, showcasing the very best fruit from each vintage. Lots of Cabernet Sauvignon (79%), Merlot (7%), Petit Verdot (12%) and Cabernet Franc (2%) are chosen for their concentration, depth of flavor and fine tannin structure to produce a wine that is rich, elegant and opulent. The wine goes through native yeast and malolactic fermentation and is aged in primarily new French Oak barrels for 18 months before being bottled unfiltered.

"Merryvale’s Profile remains a star year after year. The ’04 is nearly all Cabernet Sauvignon, and stuns with its power. With a smooth, complex tannin structure, it’s rich in currants, blackberries and cedar, but is too young to open now. Should hit its stride around 2010 and continue to develop for some years after. Wine Profile

Vineyard Notes A very warm winter led to one of the earliest bud breaks on record and that trend carried on throughout the growing season. Veraison was completed early and growers had to hold on as acids caught up to well-developed sugars. Temperatures were steady into an early harvest of a normal sized crop and very good quality, with slightly elevated tannins, color and alcohol.
